Yes. Easy. Really. Just make my recipe for Gluten Free Quick Rolls.
When the batter is done, use an ice cream scoop to place 3 heaping spoonfuls of batter on each parchment or silpat lined baking sheet. Spread them out so you have plenty of room to form the crust. Then use an offset spatula, or table knife to spread the batter into 6 inch circles about 1/4 inch thick.
Or, spread the batter out on two 10 inch parchment lined round pizza pans.
Bake at 350 degrees Fahrenheit for 10-12 minutes, until top is set and bottoms are just beginning to brown.
Remove from oven, top with your favorite sauce and toppings and bake on a baking sheet at 420 degrees Fahrenheit for 5 to 7 minutes.
If not using crusts right away, let cool and store in the refrigerator for up to one week, or in the freezer for up to one month. Recipe will make approximately 6 six inch crusts, 4 eight inch crusts or 2 ten inch crusts.
This recipe also works great as a gluten free flatbread to serve with hummus or for sandwiches!
