I was ecstatic this morning over my first fully ripe Better Boy tomato of the summer! So on the menu for lunch today, a Caprese Sandwich made with fresh tomato and purple basil from my kitchen garden.
There is no recipe for this sandwich; just layer fresh tomato slices, fresh basil, lettuce and mozzarella cheese on bread of your choice (mine was oat pita bread). I slathered on some homemade mayonnaise before the layering, for that I used this recipe from epicurious.com:
I used the homemade mustard in my last post for this mayonnaise; the mustard combined with fresh egg gave it a lovely yellow color.
I drizzled some lemon vinaigrette over the top and had the freshest lunch ever!
