Are you fighting high cholesterol? Or, trying to reduce your saturated fat intake? I have a great diet hack for you. Prosciutto!
Prosciutto. Really. Did you know you can cook prosciutto in the microwave and it will crisp up very similarly to bacon? Just place 4 slices on parchment or paper towel, fold over to cover and heat on high for 20-30 seconds.
With 4 slices of prosciutto compared to 4 slices of bacon (28 grams), you will save 6.5 grams of total fat, 3 grams of saturated fat, 60 milligrams of sodium and 20 milligrams of cholesterol.
I use it in place of bacon for breakfast, on pizza, sandwiches and even chopped and sauteed with veggies for soup and beans.
My favorite is a prosciutto, lettuce and tomato sandwich drizzled with lemon vinaigrette. This one had greens cut straight out of my garden; basil and nasturtium leaf with sprouts of radish, swiss chard and arugula.
Here is my recipe for a quick lemon vinaigrette, just put it all in a small jar and shake:
