Quick and healthy Pumpkin Oat Bars

This oat bar is so quick and easy to prepare, you simply mix all ingredients in a microwave safe plate, spread out and cook for 2-3 minutes in your microwave!

Quick Pumpkin Oat Bars

3/4 cup quick oats

1/3 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon pumpkin pie spice

1/2 teaspoon salt

1/4 cup chocolate chips

1/3 cup pumpkin puree

2 tablespoons maple syrup

2 tablespoons melted unsalted butter

I like to sprinkle a teaspoon or two of turbinado sugar on top before microwaving.

Quick Pumpkin Oat Bars can easily be made dairy free and gluten free with a few substitutions.

Swap out the butter for coconut or vegetable oil, chocolate chips for dairy free ones and any gluten free flour (plus 1/2 teaspoon of xanthan gum) for the whole wheat flour.
