It has rained here so much I can’t even remember the last time the sun was shining. Today was another gloomy, misty, foggy day; a blue day. It reminded me of days living in upstate New York during winter. Except, at least there was usually snow on the ground to brighten things up there.
How to make my own sunshine? Take in all of the leaves changing color on the trees. And, now that it is after 5, make a little cocktail.
To make this Blue Gin & Tonic, muddle some fresh or frozen blueberries together with a little sugar, honey or agave nectar in the bottom of a cocktail glass. Add a little squirt of fresh lemon, a splash of gin and top with tonic water. Garnish with a lemon slice!
~Hint: I used my dried blueberry to rim the glass. You get a bright blue flavor with every sip you take!
