My ‘gluten free’ daughter has exams tomorrow and I’ve been feeling badly for her lately as she doesn’t always get to indulge in the same treats as the rest of the family. So, today I tested a gluten free version of His Mother’s Brownies and they won family approval!
For the gluten free option you simply substitute 1 cup of gluten free baking mix (with xanthan gum), for the 1 cup regular flour called for in the recipe.
I sifted my own blend of 1/2 cup brown rice flour, 1/2 cup coconut flour, 2 tablespoons of potato starch and 1/2 teaspoon xanthan gum. I love the addition of the coconut flour, it added a nice flavor and gave the brownies a slightly denser texture.
