I’ll Have A Blue Christmas…Handpie

blue cranberry handpies

I took this photo in natural late afternoon light and ended up with a blue tinted exposure. Rather than post processing it to fix it, I left it ~ rather appropriate for the recipe!

This is the time of year that has me missing all of the important people in my life who are now with me in spirit only. It doesn’t make me sad, it reminds me to celebrate life and all of the happy moments in it.

To me, making something so elemental as food and sharing it with those I love is a gift I am thankful to be able to provide.

Make these to share with one or many.

Blue Cranberry Hand Pies

Roll out the  Perfect Crust or Puff Pastry on a lightly floured surface and cut to desired shape

Fill with Blue Cranberry Jam, adding 1 tablespoon of maple syrup for each cup of jam used

Seal edges with beaten egg

Crimp with fork or roll

Brush top with beaten egg and sprinkle with sugar

Bake at 400 degrees Fahrenheit for 8-10 minutes, or until pastry is baked and edges are light golden brown

Don’t stress if your filling leaks

Share and enJOY!
