These treats are easy and toothless, because they were made for my daughter on the occasion of having her wisdom teeth removed this morning!
A little soft soothing sugar in the form of apple gelatine and vanilla pudding to help ease her pain.
4 cups cold apple juice or sparkling apple cider
2 pouches gelatine powder (I used Knox brand)
Pour out 1 cup of the juice into a heat safe bowl and sprinkle the gelatine powder over top. Let sit while bringing remaining 3 cups of juice to a boil.
When juice begins to boil, remove from heat and stir into the gelatine mixture slowly until gelatine is fully dissolved. Place in refrigerator for 2 to 4 hours.
Serve when ready, makes 4 to 5 servings.
1 tablespoon butter
1 tablespoon potato starch (or 1 tablespoon flour if not making gluten free)
1/3 cup granulated sugar
pinch salt (if using unsalted butter only)
1 teaspoon vanilla paste or vanilla extract
2 1/2 cups milk
Melt butter in medium saucepan over low heat. Stir in potato starch (or flour) and sugar and cook for 1-2 minutes. Add salt, vanilla paste and milk and whisk to combine.
Add egg, whisking quickly to mix well. Turn heat up to medium high and cook while whisking until mixture comes to a boil. Turn heat down and simmer while whisking for 2 minutes. Remove from heat, strain through a sieve if you have any clumps or cooked egg pieces.
Cover and refrigerate for at least 2 hours. Top with chilled whipped cream, if desired. Makes 3 to 4 servings.
