Easy Espresso Maple Pecan Granola

This recipe is quick, simple and tasty! I love granola for breakfast and usually just eat it out of hand. Sprinkle it on your yogurt or breakfast bowl for light crunch, press it onto the tops of biscuits or cookies before baking, or eat it simply in a bowl with milk.  It’s hearty healthiness will fuel your day!

Maple Pecan Granola

3 cups old fashioned oats (not quick oats)

1/2 cup oat bran

1/4 cup roughly chopped pecans

1/4 cup softened or melted butter

1/3 cup maple syrup

1 teaspoon ground cinnamon

1/4 teaspoon salt

1 teaspoon orange zest

1 teaspoon instant espresso powder

Preheat oven to 325 degrees Fahrenheit. Combine all ingredients (except for orange zest and espresso powder) in a large bowl until everything is coated. Spread out evenly on parchment lined sheet pan.

Bake for 15 minutes, stirring halfway through. Rotate pan and bake for 15 to 20 minutes more, stirring again after 7 or 8 minutes. Remove from oven when granola is fully toasted and light golden brown.  Immediately sprinkle orange zest and espresso powder over the top and stir it around a little.

Let granola cool completely on the sheet pan. Store in a resealable jar or container. Enjoy!

This granola is faintly sweet. If you like sugar, add chopped dried fruit of your choice after the granola cools, or serve it with sliced fresh fruit like strawberries and bananas.
