Chocolate and Vanilla Sugar Cookies with Turmeric Glaze

I think you’ll know what inspired these cookies. While we weren’t in the path of Totality here, it was an awesome phenomenon to watch and I wanted an edible way to recreate the experience!

I used my recipe for Sugar Cookie Cutouts and simply added 2 tablespoons cocoa powder to half of the dough. I used my 3 inch round cookie cutter to cut sun and moon shadow cookies out, placing them 1 inch apart on parchment lined baking sheets.

I then baked them in a 350 degree Fahrenheit oven for 10 minutes and let them cool completely before decorating.

Sugar Cookies Baking

To decorate, mix up a batch of:

Meringue Powder Icing Glaze

2 cups confectioner’s sugar

2 tablespoons meringue powder

1/2 teaspoon salt

2 tablespoons whole milk or coconut milk

1/2 teaspoon almond extract

If the icing seems too runny, add a little more confectioner’s sugar to get the right consistency. It should be thick and fall in ribbons off the spoon.

To give your icing some sunny color naturally, use a few pinches of ground turmeric.

Frost the sun cookies, then place the moon shadows over the top but off center. Drizzle with more icing around the sides and let set before serving.

Cookie and icing recipe will make 20 Eclipse cookie sandwiches with some dough left over for making “planet” balls.
