What do you get when you cross a pan cookie with campfire treats? Inside campout dessert heaven!
Whether you are indoors due to weather, pandemic or murder hornets or if you just don’t like camping out you can still have your toasty marshmallow treats! And you don’t have to worry about burning marshmallow.
The recipe really couldn’t be any easier! Ready?
Preheat oven to 350 degrees Fahrenheit
Melt 1 stick of Salted Butter in an 8 or 9 inch baking pan (a microwave safe pan makes this even easier)
Add 1/3 cup Granulated Sugar and 1/3 cup Light Brown Sugar (tightly packed)
Add 1 teaspoon Vanilla Extract
Stir just to mix
Add 1 and 1/3 cups Unbleached All-Purpose Flour
Add 1/2 teaspoon each of Baking Soda and Cream of Tartar
Add 1 large Egg
Stir just until mixed completely
Even batter out in pan with spatula
Toss 1/2 cup each of crushed Graham Crackers, Mini Marshmallows and Chocolate Chips or chopped Milk Chocolate Bar evenly over the top
Bake for 25 to 30 minutes
Let cool completely before cutting into wedges or squares

For a gluten-free version of these bars substitute 1 1/4 cups gluten-free baking mix (with xanthan gum) for the all-purpose flour in the recipe and use gluten-free graham crackers in the topping.
Out of gluten-free baking mix? Mix your own with gluten-free flours you have on hand. Try using 1/2 cup oat flour, 1/2 cup sorghum or brown rice flour mixed with 2 tablespoons each of potato starch and tapioca starch. Then sift in 1 teaspoon xanthan gum.
Yes! I have put chocolate chips in the bars, too. They are good that way, although it does take a little away from the marshmallow flavor. Good for chocolate lovers though!
